您知道液態氮除了用來做實驗，還可以用來製作冰淇淋嗎？本所穩定同位素實驗室利用極低溫之液態氮來補捉二氧化碳等氣體，本活動可讓參與者透過冰淇淋製作, 體驗液態氮瞬間將牛奶變成冰的神奇過程！
本實驗室測量大氣中CO2(d13C,d18O),N2O(d15N, d18O)的穩定同位素分析，所以在採集一般空氣樣本後，需分離純化出我們所需要的氣體，在高真空系統中，以乾冰-丙酮冷卻浴(-78度)捕捉水氣及液態氮(-195.8度)捕捉CO2及N2O，空氣中主要的氮氣、氧氣、氬氣等，在真空系統中無法被液態氮捕捉，被pump排出。經由多次的萃取純化，可以獲得高純度的CO2及N2O，再經由氣相質譜儀分析。
液態氮是指惰性、無色、無嗅、無腐蝕性、不可燃的氮氣在溫度極低的環境下而得到的液體，是氮氣在低溫下形成的液體形態。氮的沸點為−195.79 °C（77 K），在正常大氣壓下溫度如果在這以下就會形成液氮。人體若在無保護措施之情況接觸，皮膚會有嚴重凍傷之危險。
