Sucrose is a chiral molecule, it rotates the linear polarized light. First, we show how to generate linear polarized light, and then we show how to make an instrument to measure the angle of linear polarized light rotated by sucrose solution. Finally, we apply the instrument to determine the concentration of sucrose in drink.
